Actually Delicious Slow-Cooker Brussel Sprouts

I am always looking for new and fun ways to do up same old vegetables. So when I came across this recipe for delicious brussel sprouts, I just had to give it a try. And to my surprise and excitement, not only were they delicious, but they quickly became a personal favourite side dish!

Brussel sprouts are not what anyone would call a popular vegetable. In fact, before this recipe, the only way I had ever had them was boiled and served with butter a couple times as a kid. (It was only a couple of times because it was not a popular side dish among my siblings and I!) It is sad these little vegetables from the cabbage family has such a bad reputation as they contain a wide variety of vitamins and are a good source of dietary fiber. These brussel sprouts are a cinch to make and taste delicious. Try this recipe and convert your family over to this healthy vegetable side dish!

Dijon Slow-Cooker Brussel Sprouts


Yield: 4 side servings


  • 6 cups brussel sprouts, washed, ends trimmed off and chopped in half
  • 3 tsp organic dijon mustard
  • 2 tbsp organic butter or vegan butter alternative
  • 1/2 tsp sea salt
  • pepper to taste


A side note before the directions: I love these little guys so much, that I tend to make up a huge batch of them all at once. I’d like to say I keep them to use later in the week, but I usually just devour them all over dinner and lunch the next day. I’d feel guilty, except they are healthy little vegetables, so I just go for it. Cook as many of these guys as you’d like and just adjust the additional ingredients as necessary.

Wash the brussel sprouts and then trim off the tough ends and cut them in half. Toss them into your slow-cooker. Top with dijon mustard, butter or vegan butter alternative, sea salt and pepper. Cook on low for 4 hours (or on high for 2). My slow-cooker tends to be on the hot side, so 4 hours on low is all it needs. If yours doesn’t run as hot, you can cook them on low for 6 hours. They should be a little crispy on the edges and totally scrumptious.
